This is how our mothers in Chile used to make bread before any machines were introduced in homemade bread. There would be a nice wood oven in the backyards, and the baking with the heat and smell of wood would give the bread a very special flavour.
Así hacíamos el pan antes que se inventaran las máquinas de hacer pan. Debo decir que no me conformo y además un buen pan amasado nunca saldrá de una caja de plástico enchufada a la pared.
Por si alguien se anima, vamos paso a paso, primero los ingredientes
Ingredients for 1.200 kg. of bread
1 kilo flour
100 grs. more for the kneading
50 grs. yeast
2 cups lukewarm water
1 spoonful salt
1 teaspoon sugar
1/2 cup butter (the tradition indicates pork grease)
Para 1.200 grs. de pan
1 kilo de harina
100 grs. más para espolvorear
50 grs. de levadura en polvo
2 tazas de agua tibia
1 cucharada de sal
1 cucharadita de azúcar
1/2 taza manteca o mantequilla
We disolve the yeast in one cup lukewarm water and with the other cup of water we disolve the salt. We make a little volcano with the flour were we will put the butter in the center.
Disolver la levadura en una taza de agua tibia y con la ora taza se disuelve la sal (salmuera). Se hace un cerrito con el harina y se le agrega la manteca en trozos o derretida tibia.
We add the sugar into the flour and then the yeast and salted water. Then we start kneading with our hands until we have a very smooth and spoongie dough which will start "making noise", this will take us about 15 minutes. We paint our dough with oil and let it leaven in a warm place for 20 minutes. The dough is ready when it has doubled its volume.
Se coloca la cucharadita de azúcar y luego la levadura y la salmuera. Se va formando la masa con las manos y se amasa hasta que suene y esté esponjosa. Se pinta la masa con aceite y se deja "leudar" en lugar tibio en una fuente por 20 minutos. La masa está lista cuando ha subido al doble de su volumen.
We cut kead the dough in order to have a long piece which we will cut in 12 pieces and then we make small balls which we will paint with beaten egg yolk, we make holes with a fork and let these breads to leaven again 20 minutes.
Se estira la masa en forma de tubo y se cortan doce pedazos que se soban bien para darle una forma redonda, se les hacen agujeros con un tenedor y se pintan con una yema de huevo batida con un poco de leche. Se dejan leudar sobre una lata de horno enharinada 20 minutos más.
We bake our breads for 25 to 35 minutes at medium heat (180C)
